La Spigola serves traditional Sardinian cuisine offering the taste of the island itself, with local fish.

A FAVORITE RECIPE
Stuffed Calamari
2lbs calamari  
Clean calamari and remove the heads.  Set aside. 
Stuffing:
½ medium size fresh red pepper finely chopped
10 pitted black olives finely chopped
¼ cup bread crumbs
½ garlic clove minced
Calamari heads minced
1 tsp of Italian parsley chopped
½ tsp of dry red pepper flakes (or to your taste)
1/3 cup white wine
Salt & pepper to taste
Splash of Brandy (just enough to dampen)
Sautee the minced calamari heads, fresh red
pepper, red pepper flakes, black olives, garlic and parsley in
olive oil for 3-4 minutes in a skillet; flame with the Brandy.

Pour sautéed ingredients into a bowl, season to taste, add bread crumbs and mix well.
Fill the cleaned calamari and secure with a wooden toothpick.

Cook the stuffed calamari stove top in olive oil for about 5 minutes turning continuously; after
the first 3 minutes add the white wine and cook for 2 more minutes.

Remove from the heat, slice in ½ inch slices and serve.
